A LETTER FROM OUR WINEMAKER

Sorry for the much-delayed correspondence from The Fableist!  

With harvest upon us, our team has been super slammed. We’re working around the cellar and the entire property to take this little side project to the next level.

If you haven't been out to the property lately, we just replanted another 40 acres around the winery and tasting room; those vines had finally gone past their breaking point. We also recently renovated two of the old tractor barns down below the cellar, now ready for more winemaking use and barrel storage.

All good things, of course. With everything going on, though, we unfortunately fell a little behind in sending our the six new wines that we’ve bottled just for you.

Each summer, we typically like to do a deep dive into the cellar, blending and bottling a few select barrels that represent the hidden gems of all hidden gems in our barrel room. Think of this exercise as our own version of a TV cooking competition. A great but random mix of phenomenal ingredients that we need to wrap our heads around, then come up with something unique, expressive and delicious. 

We’re more eager than ever to share this fall release, which really showcases the culinary art side of wine, even though most of the work was done out in the vineyard. 

Here is what the team felt really sang this season.  

2022 Reserve Pinot Noir 

Another offering from the SLO Coast AVA. Aged for 21 months in neutral oak, this Pinot is the perfect pairing for your holiday tables (we’re thinking roast duck, carrots and mushroom risotto).

2022 Reserve Cabernet Sauvignon

An excellent representation of our local wine making scene. We sourced Cabernet Sauvignon across six vineyards, then aged for 20 months in 25% new American oak, 25% new French oak and 50% neutral. Enjoy now or stash in your cellar for years to come.

2022 Reserve Paso Robles Highlands

Our team always delights in making this standout wine, sourced from two distinct vineyards in the Paso Robles Highlands. The high elevation allows us to preserve the grapes’ acidity, delivering a fresh but remarkably complex result. This year’s blend is 86% Petite Sirah and 14% Cabernet Sauvignon, aged for 20 months in a mix of second-fill, third-fill and neutral oak.

Non vintage Reserve Super Templeton Blend

You’ve heard of Super Tuscans. We’d like to offer our own take: a Super Templeton blend, comprised of 37.5% Sangiovese, 37.5% Aglianico, 12.5% Cabernet Sauvignon and 12.5% Petite Verdot. Sourced from around the Central Coast, we aged each varietal in neutral oak from 8 to 44 months. 

2023 Reserve Bordeaux Blend

Our final bottle this season is a red wine blend of 60% Cabernet Franc and 40% Merlot, aged for 8 months in 14% third-fill and 86% neutral oak, allowing the grapes’ natural flavors to shine. Rugged but refined, this wine can stand up to your hearty winter dinners, like braised lamb shoulder, roasted vegetables and savory bruschetta.
